Almost 10 years ago, Han began their journey into the world of cheese at a small shop in Carmel-by-the-Sea, CA. At the time, they had no background in food, but working there ignited a passion that has lasted a lifetime. As they moved from the Central Coast to Southern California and eventually to Portland, that passion stayed with them.

After 2020, while working in a couple of grocery stores, Han realized how much they missed the personal connections I had at that first cheese shop. There’s something truly special about seeing someone’s face light up when they discover their new favorite cheese. And then there's the storytelling—sharing the rich histories behind each cheese, and taking people on a journey around the world without needing a passport.

This realization led them to see that there was a real need for more of that personal experience here in Portland. That’s how Caseus Diem was born—Latin for "Cheese the Day." They wanted to create a welcoming, cheesy space where everyone can come together. They are incredibly excited to bring this vision to life and share it with the Portland community.
